Taste the phases of the moon at Mirazur’s 3-month pop up in SG

Singapore may be miniscule on the world map, but our culinary scene sure isn’t. With a UNESCO-recognised hawker culture, Michelin-starred restaurants, and hopeful eateries springing up and peppered around our island home, Singapore is a breeding ground for palates of diverse cuisines. In May, we celebrate French delicacy with a pop-up restaurant of Mirazur, the world-acclaimed three Michelin-star restaurant in Merton, France.

Crowned as the Best Restaurant in the World in 2019, Mirazur will be having a threee-month pop-up residency from 14 May to 11 August 2021. It will be using the space of Kin and Clan Cafe in Mandala Club, formerly known as Straits Clan. Taking over the establishment that sits on Bukit Pasoh Road, its opulent white colonial design commands admiration—as much as its menu does.

Mirazur’s Chef-owner Mauro Colagreco and his team will be dishing out ingenious creations in the form of a six-course lunch (S$388) or a nine-course dinner (S$488). Transposing Merton’s culinary practice into the local fine dining scene, Chef Colagreco shares that their menu will centre around the theme of the lunar cycle—the moon’s different phases. They present four rotating menus, Roots, Leaves, Flowers, and Fruits, where according to the impact of the moon’s positions on garden plants, ingredients at the prime will be used in the dishes.

The Leaves menu spots the lamb confit, accompanied with a mille-feuille (French Napoleon pastry, vanilla slice, or custard slice) of salad leaves and seaweed. On a darker note, the Roots menu features a savoury delicacy of fish, black garlic and liquorice, inspired by the dark side of the moon.

The local palate would be taken into consideration, with familiar ingredients and flavours incorporated into the menu. This is done under the collaboration of Chef Colagreco and Chef Damian D’Silva of Restaurant Kin, for the research and development of the menu. The taste of the moon’s different phases includes a whole embodied experience, as the interior of Clan Cafe will transform into a lunar garden lobby. Adorned with reflective surfaces that emulate the glint of the sea, porous textures reflecting the surface of the moon and even soft turf to recreate terraced gardens of Mirazur, the experience would be sensorial.

About the theme of Mirazur’s pop-up, Chef Colagreco shares that there is a loss of synergy between individuals and nature in urban societies. He is inspired to create a fine dining experience that illustrates Mirazur’s philosophy while including locals’ culture and expectations. Currently, the reservation window for the fourth menu: Fruits, from 20 July to 11 August 2021, will be opened soon, so keep your eyes peeled for the news to snag a seat for this rare opportunity.

With the current no dining-in situation, Mirazur’s residency has been extended till 4 September 2021. Reservations from 18 May to 13 June 2021 would be reallocated, so diners, there’s no fear of missing out on your long-awaited Michelin-starred dinner.
